Bacon-wrapped pork loin with mustard is a special-occasion meat dish for a larger gathering. The seasoned pork loin is first seared on all sides, rested briefly, then coated with mustard and mustard seeds and wrapped in smoked bacon, which turns crisp in the oven. Serve with potatoes and a fresh cucumber salad. The recipe makes eight servings.

Instructions
Tip: tap a step to mark it as done.
Season the pork loin thoroughly with salt and pepper.
Heat oil in a large skillet over high heat. Sear the pork loin on all sides, including the ends, until golden brown all over.
Let the seared meat rest on a cutting board for about 10 minutes.
Meanwhile, arrange the bacon slices close together to form a continuous sheet about as long as the pork loin.
Spread the mustard over the meat, place it in the middle of the bacon sheet, and wrap it so the bacon covers its entire length and all the way around.
Peel the onions, cut them into thick rounds, and arrange them in the bottom of a roasting pan.
Carefully place the pork loin on the onions and add a little water to the pan. Sprinkle the meat with the mustard seeds and cover the pan with a lid or aluminum foil.
Roast in an oven preheated to 170 °C (340 °F) for about 90 minutes. Uncover the meat and roast for about 20 more minutes at 190 °C (375 °F).
Cut the meat into thin slices and spoon over a thin sauce made by reducing the pan juices with beef broth.
Tip: Run the back of a knife along the bacon slices before arranging them to stretch and thin them so they wrap around the pork loin without gaps. Place the wrapped meat seam-side down on the onions to keep the bacon from coming undone during roasting.
