Breaded fried fish fillets are a quick alternative to carp for Christmas Eve dinner and a popular lunch year-round. Thaw frozen Alaska pollock or pangasius fillets and dry them thoroughly, then coat them in flour, egg, and breadcrumbs and briefly fry them in oil. They pair well with potato salad.

Instructions
Tip: tap a step to mark it as done.
Thaw the fillets
1 hrPlace the frozen fillets in a sealed bag in a bowl of cold water and let thaw for about 1 hour, changing the water once.
Dry and season
5 minDry the thawed fillets thoroughly with paper towels, cut into serving-size pieces, drizzle with lemon juice, and season with salt.
Bread the fillets
10 minBeat the eggs with the milk. Coat the fillets in flour, then the egg mixture, and finally breadcrumbs, pressing the coating gently to help it adhere.
Fry
15 minHeat about 1 cm of oil in a skillet and fry the fillets over medium heat for 3–4 minutes per side, until golden brown. Drain on paper towels.
Serve
Serve the fillets hot with lemon wedges and potato salad.
Tip: Dry the fillets thoroughly before breading, as the coating can come off wet fish during frying. Fry thicker pieces over slightly lower heat for a minute longer so they cook through in the center.
