Cod with chickpeas and spinach is a quick one-pan meal: simmer tomatoes and chickpeas with garlic and paprika, stir in fresh spinach, then lay the cod fillets on top. The fish cooks under a lid for just a few minutes, keeping it juicy.

Instructions
Tip: tap a step to mark it as done.
Prepare the cod
5 minPat the fillets dry with a paper towel and cut into 4 portions. Season with half the salt and the black pepper, then drizzle with lemon juice.
Simmer the chickpeas
8 minHeat the oil in a large skillet. Add the chopped garlic and sauté briefly without letting it brown. Stir in the paprika, then immediately add the halved tomatoes, drained chickpeas, water and remaining salt. Simmer for 5 minutes.
Add the spinach and fish
10 minStir in the spinach and let it wilt. Place the cod portions on top, cover and simmer over low heat for 7–8 minutes, until the fish is white and flakes when touched with a fork.
Serve
Serve immediately with bread or a baguette to soak up the juices.
Tip: Thaw frozen fillets in the refrigerator and pat them thoroughly dry before simmering, or they will release too much water and thin the sauce.
