Peppers stuffed with bulgur are a variation on classic stuffed peppers: bulgur replaces rice in the ground beef filling and only needs to be soaked in hot water beforehand. The peppers bake in a tomato sauce with garlic until tender.

Instructions

Soak the bulgur
10 minPour 150 ml of hot water over the bulgur, cover, and let soak for 10 minutes.
Stuff the peppers
15 minPreheat the oven to 190 °C (375 °F). Cut the tops off the peppers and remove the seeds. Mix the ground beef with the bulgur, finely chopped onion, egg, paprika, salt, and black pepper, then stuff the peppers with the mixture.
Make the sauce
5 minMix the tomato puree with the water, crushed garlic, sugar, oil, and salt, then pour into a baking dish.
Bake
50 minStand the peppers upright in the sauce, cover them with their tops or aluminum foil, and bake for 40 minutes. Uncover and bake for another 10 minutes, until the peppers are tender and the filling is cooked through.
Tip: Choose straight peppers with wide bases so they stand upright in the baking dish. Do not pack the filling tightly, as the bulgur will expand a little more during baking.
