Zucchini rings stuffed with ground beef are coated in flour and egg and pan-fried. Cut the centers out of thick slices of peeled zucchini, then fill the openings with beef seasoned with salt, pepper, and garlic. Fry slowly over low heat for about 15 minutes per side so the meat cooks through. Two small zucchini and 300 g of beef make four servings. Serve with potatoes or a vegetable salad.

Instructions

Tip: tap a step to mark it as done.

  1. Wash and peel the zucchini, cut into thick rounds, and cut out the center of each round. Season the ground beef in a bowl with salt, pepper, and garlic, then fill the openings with the meat mixture.

  2. Place the flour in one bowl. In another bowl, beat the eggs with salt and pepper. Coat the stuffed rings first in flour, then in egg.

  3. Heat the oil in a skillet and fry the rings over low heat for about 15 minutes per side. The meat needs this longer cooking time to cook through.

Tip: Pack the meat firmly into the rings and level it with the edges so it stays in place when you flip them. Save the zucchini centers and grate them into soup, for example.
