Chili con carne with beef and beans is a thick, spicy, one-pot dish of ground beef, red kidney beans, tomatoes, and bell pepper. Cumin, paprika, and ground chili give it its signature flavor; adjust the chili to your taste.
Make it ahead for several days and divide it into containers. Serve it on its own, with rice, or with a piece of bread; account for any side dishes separately when calculating nutrition per serving.

Instructions
Tip: tap a step to mark it as done.
Brown the beef
Heat the beef in a large pot without oil. Cook for 8 minutes, breaking it up constantly with a wooden spoon, until browned and its fat has rendered.
Add the vegetables and spices
Add the finely chopped onion and diced bell pepper and cook for 5 minutes. Stir in the crushed garlic, cumin, paprika, ground chili, and oregano. Stir briefly until fragrant.
Simmer
Add the tomato paste, tomatoes, and water, season with salt, and bring to a boil. Cover and simmer over low heat for 30 minutes, stirring occasionally.
Add the beans
Stir in the drained beans and corn and cook uncovered for another 10 minutes, until the chili thickens. Season to taste with salt, black pepper, and ground chili.
Tip: For a milder dish, leave out the ground chili and let everyone adjust the heat at the table. Freeze the cooled chili in individual portions and thaw in the refrigerator.
