These folded puff pastries are squares of dough filled with ham, cheese, and sour cream, with two opposite corners folded over the filling. The egg in the filling helps it set during baking while keeping it creamy, and the pastry puffs up around it into crisp layers.

Two rolls of puff pastry make 12 pastries to serve to guests, enjoy with wine, or have as a snack. Unlike ham, cheese, and onion pockets, these have a sour cream filling.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the filling

    10 min

Dice the ham finely and coarsely grate the cheese. Mix with the sour cream, one egg, chopped parsley, and black pepper. There is no need to add salt, as the ham and cheese are already salty.

  2. Cut the pastry

Preheat the oven to 200 °C (400 °F), conventional (top and bottom heat), and line a baking sheet with parchment paper. Unroll the pastry along with its paper and cut each sheet into 6 equal squares.

  3. Fold the pastries

    10 min

Place about 1 tbsp of filling in the center of each square, forming a strip from one corner to the opposite corner. Fold the remaining two corners over the filling, overlapping them slightly, and press firmly to seal. Leave the filling visible at the ends.

  4. Bake

    20 min

Transfer the pastries to the baking sheet, leaving space between them. Beat the second egg and brush it over the pastries. Bake for about 20 minutes, until puffed and golden brown.

  5. Serve

    5 min

Let stand for 5 minutes to allow the filling to set, then serve warm or cooled.

Tip: Brush the corners of the pastry with a little egg before folding them over, then press firmly with your finger so they do not open during baking. Keep the filling away from the edges so the melted cheese does not leak onto the baking sheet.
