Yellow split pea stew is a traditional home-style dish made by blending cooked split peas until smooth and thickening them with flour mixed into milk. Split peas do not need soaking: simply sort them, rinse several times, and cook for about an hour until tender. Garlic pressed in at the end adds a bold flavor. Serve with cooked smoked meat, fried onion, and fresh bread.

Instructions
Tip: tap a step to mark it as done.
Spread the peas on a table and sort through them, removing any debris or small stones.
Place the peas in a pot, cover with water, and drain. Repeat several times to rinse them thoroughly. Add the measured amount of water, salt, and pepper, and cook until tender, about 60 minutes.
Tip: Dried split peas do not need to be soaked for several hours beforehand.
Blend the cooked peas until completely smooth. Stir the flour into the milk until smooth, pour into the peas, and cook briefly. Finally, add the pressed garlic and season with additional salt and pepper to taste.
Peel the onion and fry it in oil until deeply golden brown. Sprinkle it over the stew when serving.
Tip: For a crispier onion topping, cut the onion into thin half-moons and lightly coat with all-purpose flour before frying. The stew thickens as it cools, so thin it with water when reheating.
