Carp in white wine is baked in a baking dish on a bed of onions and garlic with dry white wine poured over them. The wine gives the fish a gentle acidity, and the pan juices make a sauce to serve with potatoes.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the carp

    10 min

Preheat the oven to 190 °C (375 °F). Pat the carp portions dry, make crosswise cuts through the flesh down to the skin, and season with salt and pepper.

  2. Prepare the onions and garlic

    5 min

Grease a baking dish with half the butter. Arrange the sliced onions and sliced garlic in the dish and pour in the wine.

  3. Bake

    35 min

Place the carp skin-side up on top of the onions and garlic, put a piece of the remaining butter on each portion, and bake for 30–35 minutes, until the fish is cooked through and the skin is golden. Baste the fish with the pan juices halfway through baking.

  4. Serve

Sprinkle with parsley and serve with boiled potatoes and the onions from the baking dish.

Tip: Use a dry white wine for baking, such as Riesling or Grüner Veltliner; sweet wine would give the fish an unpleasant sweetness.
