Carp baked in cream is a simple oven dish: season the portions with lemon, arrange them over sliced onions, and bake them in cream. The onions and cream make a sauce that goes well with boiled potatoes.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the carp

    15 min

Pat the carp portions dry with a paper towel. Using a knife, score the flesh crosswise all the way down to the skin. Season with salt and pepper, drizzle with lemon juice, and let stand for 10 minutes.

  2. Arrange over the onions

    5 min

Preheat the oven to 190 °C (375 °F). Grease a baking dish with the butter. Thinly slice the onions into rings and spread them in the dish, then place the carp on top, skin side up.

  3. Bake

    35 min

Bake for 15 minutes, then pour in the cream and sprinkle with paprika. Bake for another 15–20 minutes, until the fish is cooked through and separates easily from the skin.

  4. Serve

Sprinkle with parsley and serve with boiled potatoes, spooning the cream and onion sauce over the potatoes.

Tip: Score the carp flesh at intervals of about 3 mm to cut through the small fork-shaped bones so they soften during baking and do not get in the way when eating.
