This split pea puree is a smoother, more delicate version of traditional thick split pea mash: yellow split peas are cooked until tender, blended with butter, seasoned with marjoram, and topped with fried onions. Serve it as a side dish with smoked meat, sausages, hot dogs, or roasted pork neck.

Instructions

Tip: tap a step to mark it as done.

  1. Cook the split peas

    50 min

Rinse the split peas, add 900 ml water, and cook for 45–50 minutes, until they break down. Skim off any foam and add water as needed.

  2. Blend

    5 min

Use an immersion blender to blend the peas with the butter, marjoram, and salt until smooth. If the puree is too thick, thin it with a tablespoon of hot water.

  3. Fry the onion

    10 min

Cut the onion into thin half-moons and fry in the oil until golden brown.

  4. Serve

Serve the puree warm, topped with the fried onions, as a side dish with meat or hot dogs.

Tip: The puree will firm up as it cools. To reheat, stir in a little water or milk and warm over low heat, stirring constantly.
