Jamie Oliver's roasted beets with garlic and balsamic vinegar make a side dish that also works as a light dinner. Season beet wedges and unpeeled garlic cloves with salt, pepper, marjoram, and herbs, then drizzle with olive oil and balsamic vinegar. The key is to seal them tightly in a foil packet so the juices cannot escape. Roast at 200°C (400°F) for 60 to 90 minutes, depending on their size, until the beets are tender.

Instructions
Tip: tap a step to mark it as done.
- Cut the cleaned beets into wedges. Line a baking dish with foil, extending it up the sides. Arrange the beets and unpeeled garlic cloves on the foil, season with salt, pepper, and herbs, then drizzle with the oil and vinegar.
- Seal the packet carefully; this is the most important part. Cover the beets with another piece of foil and fold the overhanging edges together to form a tightly sealed packet that will keep the juices inside.
- Roast in an oven preheated to 200°C (400°F) for 60–90 minutes, depending on the size of the beets, until tender.
Tip: Squeeze the soft roasted garlic cloves out of their skins and toss with the beets and the juices from the packet. Open the packet away from you, as hot steam will escape.
