Red onion flowers with balsamic vinegar are a simple roasted side dish that makes an impressive presentation. Peel the onions and cut them into eight sections, keeping them connected at the base so they open like flowers in the oven. Toss them with olive oil, balsamic vinegar, and salt before roasting. In an oven preheated to 200°C (400°F), they are ready in about 25 to 30 minutes. Serve them alongside meat or as a dish for guests.

Instructions
Tip: tap a step to mark it as done.
- Peel the onions and cut each into 8 sections, without cutting all the way through, so they stay together.
- Place the onions in a bowl, add 3 tsp olive oil and 1 tsp balsamic vinegar, and toss to coat.
- Arrange the onions in a baking dish.
- Pour the oil and vinegar remaining in the bowl over the onions and sprinkle with salt. Add any other seasonings you like, if desired. Cover the dish with foil and bake at 200°C (400°F) for 25–30 minutes.
- Remove the dish from the oven, remove the foil, and bake for another 10 minutes. Tip: Capers pair well with the onion flowers.
Tip: Do not cut off the root end of the onion; just clean it, since it holds the flower sections together. Cut down from the top, stopping about a centimeter above the base.
