Potato patties with cheese and onion are crisp on the outside and soft inside, made from boiled potatoes as an alternative to a traditional side dish. The mashed potatoes are mixed with grated hard cheese, finely chopped onion, and two eggs, then seasoned with salt and pepper. The mixture is shaped into patties, coated in beaten eggs and breadcrumbs, and fried in oil. Serve them with a salad, dip, or vegetable side dish.

Instructions
Tip: tap a step to mark it as done.
- Peel and wash the potatoes, boil them in salted water, then mash them. Peel and rinse the onion, then finely dice it.
- Add the grated cheese, onion, and 2 eggs to the bowl of potatoes. Season with salt and pepper and mix well.
- Beat the remaining two eggs and shape the potato mixture into patties.
- Heat the oil in a skillet. Coat the patties in flour, then beaten eggs, then breadcrumbs, and fry them in the hot oil.
Tip: Let the mashed potatoes cool before adding the eggs—the warm mixture sticks to your hands, and the patties lose their shape during coating. If the mixture is too soft, stir in a tablespoon of flour.
