Savory yeast fritters are a variation on sweet doughnuts that can replace bread alongside meat, hard cheeses, or creamy spreads. The dough, made with all-purpose flour, eggs, milk, and fresh yeast, is left to rise and then spooned into oil with a teaspoon. The oil must not be too hot, or the fritters will remain raw inside. Fry them evenly on both sides until golden. They also go well with a yogurt-based garlic dip.

Instructions
Tip: tap a step to mark it as done.
First, prepare the yeast mixture: dissolve the yeast in a little warm milk and leave it in a warm place. In a bowl, combine the eggs, salt, flour, and lukewarm milk, then work in the yeast mixture.
Add lukewarm milk as needed to make a smooth dough. Cover the bowl with a cotton kitchen towel and let the dough rise in a warm place.
Heat the oil, but do not let it get too hot, or the fritters will remain raw inside. Drop portions of dough into the oil using a teaspoon.
Use a teaspoon to remove the fritters as well. Do not overheat the oil, and fry the fritters evenly on both sides until golden brown.
Place the finished fritters on a plate lined with a paper towel to absorb excess oil.
Tip: Dip the teaspoon into the hot oil before scooping each portion of dough so the dough slides off easily. Fry in small batches so the fritters have room in the oil and the oil does not cool down too much.
