This mushroom spread with onion, garlic and mustard is made with sautéed mushrooms blended with butter after cooling. Cook the mushrooms briefly with onion, caraway seeds, salt and pepper, then flavor them with garlic and mustard. Use porcini or any other mushrooms you like, depending on what is available. Spread it on fresh bread or toast.

Instructions
Tip: tap a step to mark it as done.
Rinse the mushrooms, pat them dry and chop them.
Heat the oil in a skillet. Finely chop the onion and sauté it in the oil until soft.
Add the mushrooms and caraway seeds, and season with salt and pepper to taste.
Sauté until the mushrooms soften and release their liquid. Add the garlic passed through a garlic press and cook until most of the liquid has evaporated. Remove from the heat and let cool slightly.
Transfer the mushroom mixture to a food processor or blender. Cut the butter into cubes and add it along with the mustard.
Blend into a smooth spread and add more salt if needed.
Serve on fresh bread or rolls of your choice.
Tip: Feel free to use tender stems and less attractive pieces of mushrooms, since they won't be noticeable once blended. Store the spread in a sealed container, as butter readily absorbs odors from the refrigerator.
