This easy apple and cherry yogurt cake uses cup measurements and stays moist even the next day. Mix eggs, sugar, semi-coarse wheat flour, and plain yogurt into a smooth batter, then pour half into a cake pan. Arrange thin apple slices and pitted cherries on top and cover with the remaining batter. Bake the cake for 30–40 minutes at 180°C (350°F); preparation takes about half an hour.

Instructions

Tip: tap a step to mark it as done.

  1. Beat the eggs with the sugar. Add the flour, baking powder, vanilla sugar, and yogurt, and mix into a smooth batter.

  2. Grease and flour a cake pan, then pour in half the batter. Rinse the pitted cherries and let them drain.

  3. Peel and core the apples, then cut them into thin slices. Arrange them with the cherries over the batter in the pan.

  4. Sprinkle the fruit with sugar to taste and pour the remaining batter over it. Bake in an oven preheated to 180°C (350°F) for 30–40 minutes.

Tip: Arrange the fruit so that about 1 centimeter remains clear around the edge of the pan. This lets the top and bottom layers of batter join together so the cake won't separate into layers when sliced.
