This baked eggplant with tomatoes and mozzarella is a version of the Italian dish eggplant Parmesan: eggplant slices are roasted, layered with basil tomato sauce and mozzarella, then baked with Parmesan. The eggplant is not fried, making the dish lighter.

Instructions
Tip: tap a step to mark it as done.
Roast the eggplant
25 minPreheat the oven to 210 °C (410 °F). Cut the eggplants lengthwise into slices about 1 cm thick, brush with olive oil, season with salt, and roast on a parchment-lined baking sheet for 20–25 minutes, turning halfway through.
Make the sauce
10 minBriefly sauté the crushed garlic in 1 tbsp oil. Add the tomato puree, a pinch of salt, and the pepper, and simmer for 8–10 minutes. Stir in the torn basil leaves.
Assemble the layers
10 minReduce the oven temperature to 190 °C (375 °F). Spread a little sauce in a baking dish, then add a layer of eggplant, sauce, and sliced mozzarella. Repeat the layers. Top with sauce, mozzarella, and Parmesan.
Bake
30 minBake for 25–30 minutes, until the cheese is golden and the sauce is bubbling. Let stand for 10 minutes before slicing.
Tip: Roast the eggplant until tender before layering it; raw eggplant would release water in the oven and make the dish watery.
