Bryndzové pagáčiky are savory yeasted biscuits made by repeatedly folding the dough with a filling of bryndza, a soft sheep's milk cheese, pork cracklings, and sour cream. Plain yogurt and sour cream soften the all-purpose flour dough. After rising, the dough is spread with the filling, folded in from all sides, and rolled out again several times. The biscuits are brushed with egg, sprinkled with hard cheese, and baked for about 15 minutes at 180 °C (350 °F), making them a savory option for parties or gatherings.

Instructions

Tip: tap a step to mark it as done.

  1. Stir the yeast and sugar into 100 ml of lukewarm milk and let stand until foamy.

  2. Sift the flour into a bowl and add the sour cream and yogurt. Mix in the salt and yeast mixture, then gradually pour in the remaining lukewarm milk. Knead into a smooth dough, dust with flour, cover, and let rise in a warm place.

  3. Knead the risen dough briefly and roll it out. Mix the bryndza, pork cracklings, and sour cream in a bowl, then spread the mixture over the dough. Fold the dough in from all sides and roll it out again. Repeat several times to work the bryndza into the dough.

  4. Finally, roll the dough out to about 1.5 cm thick, cut out biscuits, and place them on a baking sheet lined with parchment paper. Let rise a little longer, brush with beaten egg, and sprinkle with grated hard cheese.

Bake in an oven preheated to 180 °C (350 °F) for about 15 minutes, until golden.

Tip: Finely chop the pork cracklings so the bryndza filling spreads easily. Cut the biscuits close together, since biscuits made from the scraps of folded dough will not rise as well.
