Potato croquettes made from boiled potatoes are a crispy side dish served at Christmas with turkey, roast meat, or breaded cutlets. Mash the boiled potatoes with butter, egg yolks, and potato starch, shape them into logs, coat them in flour, egg, and breadcrumbs, and fry until golden.
Make them from scratch at home and refrigerate them once breaded until ready to cook. They pair well with roasted turkey breast with herb butter, for example.

Instructions

Boil the potatoes
Peel the potatoes and cut them into evenly sized pieces. Boil in salted water until tender, about 20 minutes. Drain and leave on the stove with the heat off for 2–3 minutes to let the steam escape so they are as dry as possible.
Make the potato mixture
Pass the hot potatoes through a potato ricer or mash until smooth, then stir in the butter, salt, and nutmeg. Let cool slightly, then mix in the egg yolks and potato starch to make a smooth mixture that is not sticky.
Shape the croquettes
With damp hands, shape the mixture into logs about 2.5 cm thick and 6 cm long.
Bread the croquettes
Coat the croquettes in flour, then beaten eggs, and finally breadcrumbs. Arrange side by side on a tray and refrigerate for 15 minutes to help the coating stay in place during frying.
Fry the croquettes
Heat the oil in a deep pot to 170 °C (340 °F). Fry the croquettes in small batches for 3–4 minutes until golden. Drain on paper towels and serve warm.
Tip: You can bread the croquettes in the morning and keep them on a tray in the refrigerator until lunchtime. Fry just a few at a time so the oil stays hot and the coating stays crisp.
