Sour cherry brownies are moist chocolate bars made with melted dark chocolate, butter, eggs, sugar, and a small amount of flour, topped with pitted sour cherries before baking. The tart cherries balance the sweet chocolate.

Chocolate
5 minPreheat the oven to 180 °C (350 °F) and line an approximately 20 × 30 cm baking pan with parchment paper. Melt the chocolate and butter together over simmering water or over low heat, then let cool slightly.
Batter
10 minMix the eggs with the sugar and vanilla sugar just until combined. Stir in the chocolate mixture, then fold in the sifted flour, cocoa powder, and salt.
Cherries
Pour the batter into the pan, arrange the cherries on top, and press them in lightly.
Bake
25 minBake for 22–25 minutes. The brownies should still be moist in the center; a toothpick may come out with a few moist crumbs. Let cool in the pan for 30 minutes, then cut into squares.
Tip: Do not bake the brownies longer than directed, or they will lose their moist center. Cut them with a sharp knife dipped in hot water.
