Opitá mníška, or “drunken nun,” is a fluffy Slovak sponge cake poked with holes after baking and soaked with a cocoa-chocolate glaze containing vodka. It is topped with whipped cream and a grated Margot chocolate bar.

The vodka is added after the glaze ingredients have melted, so the alcohol does not evaporate and the cake is not suitable for children. It is best after a night in the refrigerator.

Instructions

Tip: tap a step to mark it as done.

  1. Bake the sponge cake

Beat the egg whites, then gradually add the sugar, egg yolks, flour mixed with potato starch, baking powder, and vinegar. Bake the batter in a 26–28 cm round pan for about 45 minutes at 160–180 °C (325–350 °F).

  2. Poke the holes

Use the handle of a wooden spoon to poke holes about halfway through the baked cake, without going all the way to the bottom.

  3. Make the glaze

Pour a little water into a saucepan and bring it to a boil. Place the margarine, 1 cup water, cocoa powder, chocolate, and sugar in a bowl set over the boiling water. Melt everything together this way to prevent scorching. Then pour in the vodka, stir, and let cool.

  4. Pour the glaze over the cake

Pour the cooled glaze over the cake so that it fills all the holes.

  5. Finish with whipped cream

Whip the cream with the stabilizer and sugar until stiff peaks form, then fold in one grated Margot chocolate bar. Spread the whipped cream over the cake and grate the second bar over the top. Refrigerate the cake, preferably overnight.

Tip: Spoon the glaze directly into the holes first, then spread the rest over the surface so the sponge absorbs it evenly. Space the holes well apart, as too many holes could cause the cake to fall apart when sliced.
