Apricot and raspberry jam is made with just fruit, sugar, and lemon juice: first let the apricots and raspberries release their juices with the sugar, then cook until the jam thickens. Raspberries give it a pink color and a tart flavor. Without gelling sugar, it takes longer to cook but has a pronounced fruit flavor.

Instructions
Tip: tap a step to mark it as done.
Prepare the fruit
15 minWash, pit, and chop the apricots. Place them in a wide pot, sprinkle with the sugar, and add the raspberries and lemon juice. Let stand for 15 minutes, until the fruit releases its juices.
Cook the jam
40 minBring to a boil, stirring frequently, then cook over medium heat for 35–40 minutes, until the jam thickens. Skim off the foam with a spoon.
Test and fill the jars
10 minPlace a drop of jam on a cold saucer. If it does not run after a moment, it is ready. Pour the hot jam into clean, hot jars, close them, and turn them upside down for 10 minutes.
Tip: Cook the jam in a wide pot so the water evaporates faster. It will still be runny while hot and will thicken as it cools in the jars.
