This apricot crumb cake with spelt flour is made with just five ingredients. Spelt flour, cane sugar, butter, and egg yolks are mixed into a firm dough. Most of the dough is pressed into a 20 × 30 cm pan and briefly prebaked at 180 °C (350 °F). Apricots are then arranged on top, the reserved dough is grated over them to form a crumb topping, and the cake is baked for another 30 minutes.
Once cool, dust with powdered sugar. You can use plums, peaches, or canned fruit instead of apricots.

Place the flour, sugar, butter cut into small pieces, and egg yolks in a large bowl and work into a firm dough. Set aside about 4 tbsp of dough. Press the rest into a 20 × 30 cm pan or a 20 cm round cake pan lined with parchment paper.
Preheat the oven to 180 °C (350 °F) and bake the base for about 15 minutes.
Remove the prebaked base from the oven, arrange the cleaned, washed apricots on top, and grate the reserved dough over them. Return to the oven and bake for another 30 minutes.
Let the baked cake cool, then dust with powdered sugar.
Tip: Put the reserved dough in the freezer while the base prebakes; once firm, it will be easy to grate on the coarse side of a grater for a loose, crumbly topping.
