Raspberry grilážky are no-bake Slovak wafer bars layered with homemade caramel, walnuts, and raspberries. The caramel is made without condensed milk: slowly melt cane sugar over low heat for 10–15 minutes, then stir in butter and hot heavy whipping cream. Add chopped walnuts to the slightly cooled caramel mixture, then layer it between wafer sheets with fresh or frozen raspberries for a pleasantly tart flavor.

Instructions

Tip: tap a step to mark it as done.

  1. Slowly melt the sugar in a skillet until it turns into caramel. This can take 10–15 minutes over very low heat. Stir occasionally to prevent burning.

  2. Once the caramel is liquid, add 20 g butter and stir thoroughly. Meanwhile, bring the heavy whipping cream to a boil, pour it into the caramel, and stir quickly. The mixture will foam vigorously, but it will settle and come together after a moment.

  3. Remove the mixture from the heat and stir in ground or chopped walnuts, according to your preference. Spread the slightly cooled mixture over the bottom wafer sheet. Place the second wafer sheet on top, press it down, and spread with another layer of caramel and raspberries (halve fresh raspberries; let frozen raspberries drain and use them whole). Gently place the top wafer sheet over the filling without pressing, so the raspberries are not crushed and the wafer does not soften.

Let the wafer bars rest for half an hour to overnight; the longer they rest, the firmer they become. Eat the raspberry version within 2 days for best results; classic grilážky keep longer.

Tip: Melt the sugar in a pan with a light-colored bottom so you can more easily see when the caramel starts to darken and risks burning. Cut the finished wafer bars with a serrated knife using a sawing motion.
