This three-ingredient Russian-style ice cream brings back the familiar childhood treat of ice cream between two wafers. Whip heavy cream in a prechilled bowl, then slowly pour in condensed milk in a thin stream. Spread the cream mixture between two layers of wafer sheets and freeze. You don't need eggs or an ice cream maker, and the hands-on work takes about 25 minutes.

Tip: tap a step to mark it as done.
Place the bowl you will use to whip the cream in the freezer 30 minutes before starting.
Pour the heavy whipping cream into the chilled bowl and beat for 5–7 minutes. Once it has thickened sufficiently, begin pouring in the condensed milk in a thin stream and beat for 1 minute on low speed.
Line the bottom of your chosen pan with wafer sheets, trimming them to fit as needed. Spread the cream mixture over them and cover with a second layer of wafer sheets.
Place the pan in the freezer for 4–6 hours.
Tip: Use sweetened condensed milk—it is the only sweetener in the ice cream, and unsweetened condensed milk would leave it bland. Let it stand at room temperature for a few minutes before slicing so the knife cuts through more easily without breaking the wafers.
