Russian-style ice cream is a homemade frozen dessert made with heavy whipping cream and eggs, layered with cookies, with no ice cream maker needed. Beat the egg whites with granulated sugar and vanilla sugar until stiff, then beat in the yolks one at a time and gently fold in lightly whipped cream. Pour the mixture over cookies arranged in the bottom of a deep pan and freeze. Preparation takes about ten minutes, and the ice cream holds its shape well.

Instructions
Tip: tap a step to mark it as done.
- Line the bottom of a deep pan or container with cookies.
- Beat the egg whites with the vanilla sugar and granulated sugar until stiff peaks form. Once the whites are very stiff, very slowly beat in the egg yolks, one at a time.
- Whip the cream and add it to the beaten egg white mixture. Fold gently but thoroughly to combine.
- Spread the ice cream mixture over the cookies and smooth the top. Arrange the remaining cookies on top to form the upper layer. Freeze until firm.
Tip: Arrange the cookies tightly together and fill any gaps with broken pieces so the layers are continuous and the ice cream does not fall apart when sliced. Cover it in the freezer to keep it from absorbing odors from other foods.
