Russian-style wafer ice cream sandwiches are a homemade version of the creamy ice cream many remember from childhood. All you need is heavy whipping cream, eggs, and powdered sugar: beat the yolks with the sugar, then gently fold in the beaten egg whites and whipped cream. Spread the mixture between cake wafer sheets in a rectangular container and freeze for four hours. You can also serve the ice cream without the wafer sheets, for example with waffles.

Instructions

Tip: tap a step to mark it as done.

  1. Whip the cream. Beat the egg whites until stiff, and beat the yolks with the sugar until light and fluffy. Gently fold the beaten egg whites and whipped cream into the yolk mixture.

  2. Spread the mixture between the wafer sheets in a square or rectangular container and freeze for 4 hours.

Tip: The eggs in the ice cream remain raw, so use only very fresh eggs. Fold the beaten egg whites and whipped cream into the yolk mixture with a spatula, working from the bottom up to keep it fluffy.
