Chicken liver with pears is a quick sweet-and-savory lunch: sauté the liver in butter with onion and thyme, then serve with pear wedges caramelized in a skillet with a little honey. The sweetness of the pears complements the slightly bitter liver.

Instructions

Tip: tap a step to mark it as done.

  1. Pears

    6 min

Quarter and core the pears, then cut them into wedges. Sauté in half the butter for 2–3 minutes on each side. Add the honey at the end and let it caramelize. Remove the pears from the skillet.

  2. Onion

    5 min

Cut the onion into half-moon slices and sauté in the remaining butter until golden.

  3. Liver

    6 min

Trim any membranes from the liver, pat dry, and cut into pieces. Add to the onion along with the thyme and sauté over fairly high heat for 5–6 minutes, until the juices are no longer pink when a piece is cut open. Season with salt and pepper only at the end.

  4. Serve

Serve the liver and onion with the pears. Mashed potatoes or bread go well alongside.

Tip: Choose firmer pears, such as Conference pears, so they caramelize in the skillet without falling apart.
