Pork loin chops with pears make a quick one-pan dinner: sear the chops until golden, then caramelize pear wedges in the pan drippings with butter, honey, and thyme. Sweet pears pair well with pork, much like apples do.

Instructions
Tip: tap a step to mark it as done.
Sear the pork chops
10 minPat the pork chops dry with a paper towel, snip the fat along the edges, and season with salt and pepper. Heat the oil in a skillet until hot. Sear the chops for 4 minutes on each side, then transfer to a plate.
Caramelize the pears
8 minPeel and core the pears, then cut them into wedges. Melt the butter in the pan drippings, add the pears, and cook for 4–5 minutes. Add the honey and thyme and let the pears caramelize.
Finish cooking
5 minPour in the water and return the pork chops and any accumulated juices to the skillet. Cover and simmer for 3–4 minutes, until cooked through.
Serve
Serve the pork chops with the pears and pan juices, accompanied by mashed potatoes or pan-fried potatoes.
Tip: Add the honey only after the pears have browned; it would burn if added to the hot pan at the start.
