This coconut-walnut cake with chocolate buttercream consists of two egg-white cake layers, one walnut and one coconut. The layers use 14 egg whites, and all the yolks go into the cream: they are beaten with sugar over simmering water, combined with chocolate, and finally mixed with whipped butter. The layers bake in an oven preheated to 200 °C (400 °F) and are filled with the cream once cooled. Grated white and dark chocolate finish the top.

Instructions

Preheat the oven to 200 °C (400 °F). For the walnut layer, beat the egg whites with the sugar until foamy, then add the walnuts, oil, and finally the flour. Stir with a wooden spoon, spread in a greased and floured baking pan, and bake while you prepare the coconut batter.
Prepare the coconut batter the same way, using coconut instead of walnuts. Spread it over the walnut layer and continue baking until the coconut layer is golden.
For the filling, beat the egg yolks with the sugar in a bowl over simmering water. When the mixture is creamy and forms ribbons, add the chocolate, stir until melted, and remove from the heat. Beat the butter until fluffy, then gradually beat in the cooled egg yolk and chocolate mixture.
Spread the filling over the cooled two-layer cake, sprinkle with grated white and dark chocolate, chill, and serve.
Tip: Let the egg yolk and chocolate mixture cool, stirring occasionally, to prevent a skin from forming that would leave hard lumps in the buttercream.
