This banana oat cake with coconut and walnuts is made without flour: rolled oats, ground walnuts, eggs, and melted butter hold the batter together. Honey, ripe bananas, and grated apple provide sweetness, with no granulated sugar.
Simply mix the ingredients in one bowl and bake the cake in a 24 cm pan. Serve it with coffee or for a weekend breakfast.

Prepare the pan
Grease a 24 cm cake pan with butter and coat it with rolled oats.
Mix the batter
Mash the bananas with a fork and coarsely grate the apple. In a bowl, combine the rolled oats, ground walnuts, shredded coconut, a pinch of cinnamon, and a pinch of salt. Add the bananas, apple, eggs, honey, and melted butter, and mix thoroughly.
Bake
Spread the batter in the prepared pan and sprinkle the coarsely chopped walnuts over the top. Bake for 50 minutes at 170 °C (340 °F).

Tip: Let the cake cool completely in the pan; without flour, it holds its shape only when cool and would break apart if removed while warm. You can replace the fine rolled oats with regular rolled oats briefly pulsed in a blender.
