Marinated pork neck cooked in a grill pan tastes like it came off the grill: marinate the steaks for at least 2 hours in oil, garlic, mustard, sweet paprika, and caraway, then sear them in a hot pan. Pork neck, also called pork collar, is marbled with fat, which keeps it juicy. Serve with bread, potatoes, or a vegetable salad.

Instructions
Tip: tap a step to mark it as done.
Prepare the marinade
10 minMix the oil with the crushed garlic, mustard, paprika, caraway, and black pepper. Lightly pound the pork neck steaks and coat both sides with the marinade.
Marinate
2 hrCover the meat and refrigerate for at least 2 hours. Remove it from the refrigerator half an hour before cooking so it is no longer cold.
Sear the pork
12 minHeat a grill pan until very hot. Season the pork neck with salt and cook for 5–6 minutes per side, until cooked through and marked with browned grill lines.
Let rest
5 minTransfer the cooked meat to a plate, cover, and let rest for 5 minutes to allow the juices to redistribute. Serve with bread or potatoes.
Tip: Salt the pork neck just before cooking, as salt in the marinade would draw out the juices. Let the pan get very hot so the meat sears properly.
