Halušky with sautéed onion and Emmental are a variation on traditional Slovak dumplings made without bryndza, a Slovak sheep cheese. A dough made from all-purpose flour, eggs, water, and salt is pressed into boiling salted water, just as for classic halušky. The cooked dumplings are tossed with onion sautéed in oil and fresh parsley, then topped with grated Emmental.
This recipe is a good option if you enjoy halušky but don't eat bryndza or don't have any on hand.

Instructions
Bring water to a boil in a large pot. Meanwhile, peel and chop the onions and sauté them in a skillet. Add the parsley toward the end, remove from the heat, and season with salt and pepper.
Mix the flour, eggs, salt, and water into a dumpling dough. Press it through a halušky maker (a perforated dumpling maker) into the boiling water. Toss the cooked dumplings with the onions and add the cheese.
Tip: Stir the grated Emmental into the dumplings while they are hot so it melts and brings them together with the onion. Dip the dumpling maker into the boiling water before each batch to help the dough pass through the holes more easily.
