Halušky, small Slovak potato dumplings, with braised savoy cabbage are a variation on strapačky, a dish of potato dumplings with sauerkraut. Here, savoy cabbage replaces the sauerkraut: braise it with browned bacon and onion, then toss with freshly cooked potato dumplings. Savoy cabbage is milder and slightly sweeter than regular cabbage.

Instructions

Savoy cabbage
15 minDice the bacon and fry until browned. Add the finely chopped onion and cook until translucent. Remove the thick ribs from the savoy cabbage and cut the leaves into strips. Add the cabbage, caraway seeds, and salt, cover, and braise for 10–12 minutes, until tender.
Dough
10 minPeel the potatoes and grate them finely. Add the egg, salt, and flour and mix into a thick dough.
Potato dumplings
10 minPress the dough through a halušky maker (a perforated dumpling maker) into boiling salted water. Cook for 2–3 minutes after the dumplings rise to the surface. Lift them out with a slotted spoon and drain.
Combine
Toss the dumplings with the savoy cabbage and bacon, season with black pepper, and serve warm.
Tip: Braise the savoy cabbage covered just until tender so it keeps its green color. Overcooking will turn it brown and dull its flavor.
