Madame chicken salad with grapes and pineapple combines simply pan-seared chicken cubes with finely grated Emmental cheese and sweet fruit. Halve the white grapes, cut the canned pineapple into smaller pieces, and cook the chicken in olive oil with just salt and pepper. Toss everything with plain yogurt or cream and season with garlic and, if desired, a touch of Kremser mustard, a sweet-sour Austrian-style mustard. It is well suited to festive gatherings.

Instructions
Tip: tap a step to mark it as done.
- Wash the grapes and halve them. Cut any large pineapple chunks into smaller pieces and finely grate the cheese. Cut the chicken into cubes and pan-sear in olive oil with just salt and pepper.
- Let the chicken cool, keeping its seasoning simple. Place all the ingredients in a large bowl and pour the plain yogurt or cream over them.
- Season with salt and pepper and add a touch of Kremser mustard to taste. Finally, press in 1 garlic clove and mix everything well.
Tip: Buy seedless grapes to make halving them quick. Drain the pineapple well in a strainer, as the sweet syrup would thin the yogurt dressing.
