Vegan mushroom goulash with seitan and chestnuts is a hearty meatless dish served with bread. Seitan strips, button mushrooms, and cooked chestnuts are browned in oil in batches and set aside. Onions dusted with flour form the base of a sauce made with vegetable broth and cooking cream. Everything is then returned to the pan with thyme and sweet paprika.

For the vegan version, omit the cream. Use other mushrooms if you prefer, or substitute chili for the paprika for a spicier flavor.

Instructions

Tip: tap a step to mark it as done.

  1. Cut the seitan into strips. Clean the mushrooms and leave them whole or cut them up, depending on their size. Chop the cooked chestnuts. Peel and finely chop the onions and garlic.

  2. Heat the oil in a skillet and fry the seitan until golden. Season with salt and pepper, then remove from the pan. Brown the chestnuts and mushrooms in the same pan, season with salt and pepper, and remove them as well. Sauté the onions until translucent, sprinkle with flour, and pour in the broth. Stir in the cream (omit it for the vegan version) and cook for 10 minutes.

  3. Return the seitan, mushrooms, and chestnuts to the pan. Add the thyme, sprinkle with paprika, and simmer for 5 minutes. Adjust the seasoning before serving.

Tip: To keep the goulash fully vegan but still creamy, replace the cream with the same amount of plant-based cooking cream. Peel the chestnuts while they are still warm, as the inner skin is difficult to remove once they cool.
