These buttery yeast buns, called buchty in Slovak, taste like doughnuts but are arranged snugly together like a cake. The dough, made with semi-coarse wheat flour, milk, water, and a fresh yeast starter, rises for half an hour before being shaped into balls about 4 cm across. Each ball is rolled out, filled with a filling of your choice, sealed, and placed snugly against the others in a baking pan. The buns serve eight and bake for about 20 minutes at 200°C (400°F), with butter and powdered sugar adding the finishing touch.

Instructions

  1. Stir the yeast and granulated sugar into 100 ml of warm milk and let stand until a frothy yeast starter forms.

  2. Combine 400 g of the flour, 200 ml of milk, 200 ml of water, and the yeast starter. Gradually add the remaining 400 g of flour, stirring constantly.

  3. Knead into a smooth dough and let rise for half an hour. Shape into balls approximately 4 cm in diameter, roll each one out, place a filling of your choice in the center, and seal the dough around it. Arrange the buns snugly together in a baking pan.

  4. Melt 200 g of butter with 100 g of powdered sugar and pour the mixture over the buns in the pan. Let rise for another 20 minutes, then bake at 200°C (400°F) for 20 minutes.

Tip: Use a baking pan with high sides, as the butter and sugar could overflow a shallow pan and burn on the oven floor. Pinch the dough edges firmly together over the filling so the buns do not open as they rise.
