These cinnamon almond stars with meringue icing are flourless Christmas cookies made with ground almonds, egg whites, powdered sugar, and cinnamon. Set aside some of the meringue to spread over the stars before baking, then bake at just 150°C (300°F) to keep the icing white.

They are slightly soft inside and fragrant with cinnamon.

Instructions

Tip: tap a step to mark it as done.

  1. Beat the egg whites

Beat the egg whites with a pinch of salt until stiff peaks form. Gradually beat in the powdered sugar and lemon juice until the meringue is thick and glossy.

  2. Set aside the icing

Set aside about 5 tbsp of the meringue for the icing and cover it.

  3. Mix the dough

Stir the ground almonds and cinnamon into the remaining meringue to form a sticky dough. Wrap in plastic wrap and refrigerate for 1 hour.

  4. Cut out the stars

Dust the work surface with powdered sugar and roll out the dough to about 8 mm thick. Cut out stars about 6 cm across, dipping the cookie cutter in water as you work. Place the stars on a baking sheet lined with parchment paper.

  5. Spread on the icing

Spread a thin layer of the reserved meringue over each star, all the way to the points. A small spoon or pastry brush works best.

  6. Bake

Bake in an oven preheated to 150°C (300°F) for 10–12 minutes, until the icing is set. It must stay white, and the stars should remain slightly soft inside. Let cool on the baking sheet.

Tip: The sticky dough is easier to roll out between two sheets of parchment paper dusted with sugar. Gather and reuse the scraps after cutting out the cookies, chilling them briefly first.
