Chickpea, almond and peanut butter energy balls are a no-bake treat to take on the road, to work or on an outing. Blend ground almonds with rinsed canned chickpeas in a food processor, then add peanut butter, honey and vanilla and finally stir in chocolate chips. 3. If adding chocolate chips, remove the food processor blade and stir the chips into the mixture by hand. Shape into approximately 30 balls and refrigerate for at least 20 minutes before serving.

Tip: Pat the rinsed chickpeas dry with a towel, as excess water would make the mixture too soft. Shape the balls with damp palms to keep the mixture from sticking.
