Macaroni with chicken, bell peppers, and cream is a simple dinner with a sauce made by simmering chicken and fresh vegetables. Simmer cubed chicken breasts, then briefly sauté them with garlic browned in olive oil. Add peeled tomatoes and bell peppers and simmer with the chicken for about ten minutes, then stir in heavy whipping cream to mellow the sauce. Cook the macaroni al dente and garnish with parsley and basil.

Instructions
Tip: tap a step to mark it as done.
Cut the chicken breasts into cubes, season with salt and pepper, and simmer for about 15 minutes.
Scald the tomatoes with boiling water and peel off the skins. Dice the tomatoes and bell peppers and set aside.
Sauté the garlic in the olive oil until golden, add the chicken, and sauté over high heat for about 6 more minutes. Add the diced vegetables and simmer for about 10 minutes. Meanwhile, cook the pasta al dente.
Pour the cream into the chicken and vegetables and heat through. Toss the sauce with the cooked pasta and sprinkle with the fresh herbs.
Tip: Simmer the chicken covered with a little water to keep it from drying out. After scalding the tomatoes, cut them in half and scoop out the seeds with a spoon so the sauce won't be watery.
