French-style baked chicken without mayonnaise is a variation on a familiar baked dish that replaces mayonnaise with sour cream and egg. When heated, mayonnaise separates into fat and its proteins coagulate, so it is better suited to cold dishes. Thinly pounded chicken breasts are topped with tomatoes and onion, preferably grated for more aroma, then baked under a layer of hard cheese. Nutmeg, basil, and rosemary round out the flavor.

French-style chicken
Tip: For better flavor and aroma, grate the onion rather than slicing it into rings. Basil, rosemary, and oregano pair especially well with chicken and cheese. Check the chicken frequently during baking to keep it from drying out.
Cut the chicken breasts into thin slices and pound them thin.
Thinly slice the tomatoes. Slice the onions or grate them finely.
Crack the egg into a bowl, add the pepper and salt, and coat the chicken in the mixture. Coarsely grate the cheese.
Grease a baking sheet with vegetable oil or line it with parchment paper. Arrange the chicken slices on it and top with the onions and tomato slices.
Spread yogurt or sour cream over the tomatoes.
Sprinkle everything with the cheese and bake in an oven preheated to 180 °C (350 °F) for about 30 minutes, until the cheese browns and forms a crust.
French-style chicken with cheese is a good alternative to pork baked with mayonnaise and can be made in many variations. Serve it for a special occasion, too.
Tip: Choose firm, fleshy tomatoes for slicing that will not release too much juice, so the cheese can form a crust and the chicken will not sit in a pool of liquid.
