Grilled trout with parsley-garlic butter is a simple dish for an outdoor grill or a grill pan. Just brush the fish with oil and season with salt before grilling. Butter mixed with parsley, garlic, and lemon zest melts over the hot skin, adding flavor.

Do not turn the trout until the skin releases from the grate on its own, or it will tear. Serve it with potato salad without mayonnaise, or bake it in the oven with potatoes in winter.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the butter

Mix the softened butter in a bowl with the pressed garlic, parsley, lemon zest, and a pinch of salt. Keep in a cool place while you grill.

  2. Preheat the grill

Preheat the grill to 200–220 °C (400–425 °F), or medium-high heat. Clean and oil the grate. For stovetop cooking, heat a grill pan over medium-high heat.

  3. Prepare the trout

Rinse the trout, pat thoroughly dry, and make 2–3 diagonal slashes on each side. Brush the outside with oil, then season with salt and pepper, including inside the cavity. Slice half the lemon and place the slices inside the cavities.

  4. Grill the trout

Place the fish on the grate and grill for 6–8 minutes. Turn only when the skin releases from the grate on its own, then grill for another 6–8 minutes. The trout is done when the flesh near the backbone is white and pulls away easily.

  5. Serve

Top each hot fish with a tablespoon of parsley-garlic butter and serve with the remaining lemon cut into wedges.

Tip: You can roll the parsley-garlic butter into a log in plastic wrap and chill until firm, then simply place slices on the hot fish. Use any leftover butter on toast.
