Trout with almond butter is a restaurant classic you can make at home in half an hour. The fillets are lightly dredged in flour and pan-fried skin-side down to crisp the skin. Sliced almonds are then toasted in butter in the same pan and poured over the fish while still hot, along with lemon juice.

Boiled potatoes with parsley go well with the trout.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the fillets

Rinse the fillets, pat dry with a paper towel, and run your fingers over the flesh. Use tweezers to pull out any pin bones you feel. Season both sides of the fillets with salt and pepper.

  2. Dredge in flour

Dredge the fillets in all-purpose flour and shake off the excess. Do this just before cooking so the flour does not become damp.

  3. Pan-fry the trout

Heat the oil and 20 g of the butter in a large skillet. Place the fillets skin-side down in the skillet and cook over medium-high heat for 3–4 minutes, until the skin is crisp and the flesh is opaque almost all the way through. Flip and cook for another 1–2 minutes. Cook in batches, transferring the cooked fillets to a warm plate.

  4. Toast the almonds

Wipe out the skillet with a paper towel, melt the remaining 60 g of butter in it, and add the sliced almonds. Cook, stirring constantly, for 2–3 minutes, until the butter foams and the almonds are golden. Remove the skillet from the heat and stir in the juice of half the lemon and the parsley.

  5. Serve

Pour the hot butter and almonds over the fillets and serve with the remaining lemon cut into wedges.

Tip: Take the almonds off the heat when they are light golden, as they will continue to darken in the hot butter. Add the lemon juice carefully, as the butter will splatter vigorously.
