This homemade potato bread with caraway follows Grandma's recipe, using all-purpose flour, yeast, and two boiled, mashed potatoes. The dough also includes a tablespoon each of vinegar, oil, and ground caraway.
The dough rises twice. Before baking, the loaf is scored and brushed with salted water, then baked for about an hour at 200 °C (400 °F).

Instructions

Boil the potatoes
Boil the potatoes and mash them.
Prepare the yeast mixture
Crumble the yeast into the lukewarm milk or water, add 1 tsp sugar, and let stand for a few minutes until foamy.
Knead the dough
Stir the yeast mixture into the mashed potatoes, add the salt, vinegar, oil, ground caraway, and flour, and knead into a stiff dough. Add the water a little at a time as needed, using the reserved flour to dust the work surface while kneading.
Let the dough rise
Let the dough rise in a warm place for about 45 minutes, until doubled in size. Knead it again, shape it into a loaf, transfer it to a baking sheet lined with parchment paper, and let it rise again.
Bake the bread
Preheat the oven to 200 °C (400 °F). Make several slashes in the loaf and brush it with salted water. Bake for about 1 hour, then brush the baked bread with salted water again as soon as it comes out of the oven.
Tip: Boil the potatoes in their skins so they absorb less water and the dough has the right consistency. If the loaf gets too dark during the hour of baking, cover it with aluminum foil.
