Granadiersky pochod, a simple Slovak dish of potatoes and pasta with browned onions and caraway, is easy for anyone to make. Diced potatoes are tossed with onions browned in butter and olive oil, seasoned with caraway, sweet paprika, and black pepper, then simmered until tender. They are then mixed with cooked fliačky, small squares of pasta. For a heartier dish, add crisp bacon, a piece of roasted pork collar, or braised sauerkraut, and serve with pickles.

Instructions

Use the listed ingredients to make 3–4 servings. Allow approximately 45 minutes for preparation.
Peel and wash the potatoes, then cut them into small cubes. Peel and finely chop the onion, then brown it in a skillet with the butter and olive oil.
Add the potatoes, season with salt, and add ground black pepper, caraway seeds, and sweet paprika as needed.
Sauté the potatoes over low heat for approximately 5 minutes, stirring constantly to coat them with the onions. Add about 150 ml of water, cover, and simmer for approximately 15 minutes, stirring occasionally, until tender.
Meanwhile, cook the fliačky (small square pasta), preferably homemade, in salted water and drain.
Remove the tender potatoes from the heat, stir in the pasta, and serve. Serve with čalamáda (Slovak mixed vegetable pickles) or shredded cheese, or add pieces of crisp bacon or roasted pork collar.
Tip: Crush the caraway seeds in a mortar or rub them between your fingers before adding them to release more aroma. Brown the onions slowly, as high heat would blacken the edges and make them bitter.
