These lemon pudding bars have a tender butter crust made by mixing flour, butter, powdered sugar, and an egg. The filling combines thick vanilla pudding with sour cream, lemon juice, and zest for a smooth, pleasantly tangy cream. Bake the bars at 180 °C (350 °F) for about 25–30 minutes; the total preparation and baking time is roughly an hour and ten minutes.

Instructions

Tip: tap a step to mark it as done.

  1. Combine all the crust ingredients in a bowl and work into a smooth dough. Wrap in plastic wrap and refrigerate for 30 minutes.

  2. Meanwhile, prepare the filling. Combine the milk, sugar, and pudding mix in a saucepan and cook until thick. Let cool, stirring occasionally. Mix the cooled pudding with the sour cream, lemon zest, and lemon juice.

  3. Preheat the oven to 180 °C (350 °F) and line a baking pan with parchment paper.

  4. Divide the chilled dough in half and roll each half into a rectangle the size of the pan, for example 20 × 30 cm. Place one sheet in the bottom of the pan and spread with the pudding filling. Cover with the second sheet and bake for 25–30 minutes.

  5. Let the baked bars cool, then dust with powdered sugar just before serving.

Tip: Roll the delicate dough sheet around a rolling pin to transfer it without tearing. Prick the top sheet with a fork so steam from the filling can escape and the dough will not puff up during baking.
