Instructions

Tip: tap a step to mark it as done.

  1. First cake layer

Beat 5 egg yolks with 40 g powdered sugar until thick and foamy. Beat 5 egg whites with a pinch of salt and another 40 g sugar until stiff peaks form. Stir 130 g flour into the yolk mixture, then gently fold in the beaten whites. Spread the batter in a baking pan approximately 38 × 25 cm lined with parchment paper and bake at 200 °C (400 °F) for about 15 minutes.

  2. Second cake layer

Let the cake layer cool slightly, then invert it onto a tray and peel off the parchment paper. Bake the second layer the same way and let cool.

  3. Orange filling

Cook the juice, pudding mix, sugar, and vanilla sugar into a thick pudding. Stir the butter into the hot pudding. Let cool.

  4. Lemon whipped cream

Whip the cream with the whipped cream stabilizer, lemon juice, and vanilla sugar, then refrigerate.

  5. Pipe the stripes

Transfer both fillings to piping bags fitted with round tips. Pipe alternating strips of orange and lemon filling onto the first cake layer. Cover with the second cake layer and pipe strips on top as well. Chill thoroughly, preferably overnight.

Tip: Let the orange pudding cool completely before filling the cake, as warm pudding would melt the whipped cream. Slice with a knife dipped in hot water to keep the stripes sharp.
