Black rose cake is a Hungarian cake with four poppy seed rolls nestled in vanilla pudding cream between two baked cake layers. The dough is made with semi-coarse wheat flour, butter, egg, and sour cream, while grated apple and lemon zest brighten the poppy seed filling. When sliced, the rolls look like dark roses, so let the cake set overnight before cutting.

Instructions

Tip: tap a step to mark it as done.

  1. Dough

Mix all the dough ingredients and knead until smooth. Divide into six equal pieces.

  2. Cake layers

Roll out two pieces of dough, one at a time, to fit a baking sheet about 25 × 30 cm. Bake each on parchment paper in an oven preheated to 180 °C (350 °F) for about 12 minutes, until light golden.

  3. Poppy seed rolls

Mix the filling ingredients. Roll out the remaining four pieces of dough into rectangles as long as the baking sheet. Spread with the poppy seed filling and roll up like strudels. Place the rolls on a parchment-lined baking sheet and bake at 180 °C (350 °F) for about 30 minutes. Let cool.

  4. Vanilla cream

Whisk the pudding mix into a portion of the milk. Bring the remaining milk and sugar to a boil, pour in the pudding mixture, and cook, stirring constantly, until thick. Let cool, stirring occasionally, then beat with the softened butter until smooth.

  5. Assembly

Spread half the cream over one cake layer. Arrange the four rolls side by side on top, then cover with the remaining cream so they are completely covered. Top with the second cake layer, pour melted chocolate over it or dust with powdered sugar, and refrigerate overnight.

Tip: Let the rolls cool completely before covering them with the cream, or the butter in the cream will soften. Wait until the next day to slice the cake, using a knife dipped in hot water.
