Lavender cookies are delicate butter cutout cookies with two teaspoons of lavender mixed into the dough. Simply mix semi-coarse wheat flour, powdered sugar, butter, an egg yolk, and vanilla into a dough and chill for half an hour. Then roll it out to about 3 mm thick, cut out the cookies, and bake for only about eight minutes at 180°C (350°F). The baked cookies are crisp and pleasantly fragrant with lavender.

Instructions

  1. Mix all the ingredients into a dough, wrap in plastic wrap, and chill for 30 minutes. Roll out on a floured surface to a thickness of 3 mm and cut out the cookies. Bake at 180°C (350°F) for about 8 minutes, until the cookies are crisp.

Tip: Use only culinary lavender, not lavender from decorative sachets. Crush the flowers with the powdered sugar to distribute their fragrance evenly and avoid whole flowers in the cookies.
